Opinel No.122 Meat & Poultry Knife
This knife was made to remove nerves and bones from meats & poultry. The short and strong 2.5 mm thick blade is resistant to twisting and the handle guard protects the hand from the cutting edge of the blade.

- Acier Inoxydable X50CrMoV15: X50CrMoV15 stainless steel is highly anti-corrosive and ensure a perfect cut. Blade hardness 56-57 HRC.
- Handle: Beech is the most commonly used wood for the manufacture of Opinel handles. From France, the beech is hard, durable and easy to work. With a homogeneous appearance, its light color varies from yellow to pink. It is characterized by the presence of numerous small dark dashes.
